01 / ABOUT THE PLACE

About this place

Tucked quietly away on the 4th floor of a building in Ginza 6-chome, Sushi Kanemitsu is an intimate destination where owner-chef Takashi Kanemitsu serves refined Edomae sushi. The space consists entirely of a counter with a limited number of seats, allowing diners to watch the precise knife work and shaping of nigiri up close in a calm, focused ambiance.

The omakase course progresses through a well-structured sequence of nigiri tailored to each fish's natural qualities, featuring premium seafood such as medium-fatty tuna (chutoro) and sea urchin, as well as tenderly simmered sea eel (anago). Seasonal delicacies like female snow crab (kobako-gani) make occasional appearances, highlighting the careful preparation that brings out each ingredient's distinct character.

Attention to detail extends well beyond the main fish, through to the closing bites: sweet-savory gourd-strip rolls (kanpyo maki), delicately made tamagoyaki omelet, and pickled eggplant. The chef's approachable manner and welcoming explanations of each catch put guests at ease, removing the stiffness that can sometimes accompany counter dining in Ginza.

With business centered around omakase courses for both lunch and dinner, and seating kept intimate, booking ahead is recommended. Guests can settle in with beer or other drinks and savor the layered, enduring flavors of every single piece.
